The Beef and Heart Health Study

Study Overview
The purpose of this study is to assess the effect of substituting predominantly starchy vegetables and refined grains with 6 oz/day of lean unprocessed beef in the USDA's Healthy Vegetarian Eating Patter on cardio metabolic risk factors in healthy adults.
Study Description
The study is 4-month in length, consisting of 8 testing days plus one day of screening for the study. you will be asked to participate in a dietary intervention program for a period of 16 weeks. There will be dietary control for 10 weeks out of the 16 weeks of the study. Measurements taken during the study will include: height, weight, blood pressure, 8 blood samples, 4 stool samples, and 6 dietary recalls. All study foods will be provided at no cost for 10 weeks (2x5 week periods).
